The spinach egg cups look interesting. Nice way to handle a bunch for breakfast!
Meatloaf in a muffin pan. I didn’t like the end product. Found that even using lean ground beef there was too much fat/moisture, which almost boiled over. I bought a two part muffin pan, a perforated top pan and a regular muffin pan for the bottom. Much better meatloaf.

found it a kitchen store “Norpro” brand Nonstick Mini meatloaf/muffin Pan. $19.99 Cdn I am sure there are cheaper ones out there but didn’t want to waste time looking.
